What is whole egg powder?
Whole egg powder, also called dried whole egg or powdered whole egg, holds both the white and the yolk of the egg. Mixed with water it gives beaten egg again, so a kitchen or a factory can use it in recipes that call for eggs, without breaking and separating shell eggs.
Uses of whole egg powder
Whole egg powder is used wherever a recipe needs whole eggs. Its main uses:
- Toumia (garlic sauce) and mayonnaise in restaurants and hotels.
- Mayonnaise and sauces in sauce factories.
- Cakes and tortes.
- Sweets and baked goods in factories and bakeries.
How to mix whole egg powder with water
It can be added dry with the other powders of the recipe, or mixed with water first. The guide ratio on the product page is 1 kg of powder with 3 to 3.5 kilograms of water, which gives 4 to 4.5 kilograms of beaten egg.
Why kitchens and factories use egg powder
- A long shelf life compared with shell eggs.
- No breaking, separating or shell waste.
- The same result in every batch.
- Less storage space.
Who uses whole egg powder?
Mayonnaise and sauce factories, sweets factories, cake and torte factories and baked goods factories use it, and so do restaurants that make toumia and mayonnaise, bakeries and hotels.
